La producción y comercialización de mezcal artesanal en Atliaca, Guerrero, y su desarrollo desde el enfoque de la economía social.
Abstract
Mezcal for a long time has represented for the towns, a drink, socially important, and an economic complement, for the mezcal families. However, the overexploitation that exists of the maguey has been crucial so that every day it is more scarce, affected, to its complementary income, in this sense Atliaca, a Nahua community in the state of Guerrero, is going through a problem of scarcity and of plague in the maguey. Therefore, the objective of the research was to analyze the production process of artisanal mezcal, in the peasant families of Atliaca, and to be able to design new production and marketing alternatives based on a social economy model. From the management of pests, the conservation of wild maguey, in the improvement of standardized processes, safety, degree of maturity, distillation, packaging and labeling. With a proposal in a system of production-organization-commercialization, with the vision of a social economy, which in the future will serve as a basis to detonate forms of social organization.
The methodology applied to the study was qualitative, documentary research, semi-structured interviews, life stories, and participatory observation were used.
