Hymenaea courbaril, commonly known as coapinol, carob or locust, is a leguminous tree that belongs to the Fabaceae family, can reach 30-40 m in height. This tree has produced approximately 800 fruits per year, which are woody legumes, oblong, flattened, thick and reddish brown. Inside contains 4 to 8 big seeds, flat, ovoid, ellipsoid or oblong, hard seed coat, which regularly measure 1 2.5 cm long, 1 to 1.8 cm wide and 0.8 to 1.5 cm thickness, are light brown to dark, are surrounded by a mealy, dry pulp, of pale greenish yellow color, pleasant taste and pungent smell
